It is. You could probably also use spelt or emmer if you have either of those. I'm wondering too if it would work from oat flour. I'll have to try that sometime. They might even work with barley or rye. I'm looking forward to not gardening for awhile and having time to bake again! You should try them with butter & hard red wheat just for grins. I have to say those might have been the most addictive thing I've made this year. But fussy as all get out.

I was looking at them the other day. I think we would love them but I don't have any wheat pastry flour right now. That's from soft white wheat berries, right? I should get some palm kernel oil, as well.

Hi Auburn - have you tried these crackers yet: http://www.sustainableeats.com/2009/05/21/sustainable-crackers/

They are a little fussier which I didn't have the time for this week but they are almost exactly like a wheat thin if you add a bit of sugar and would have been great here too.

Thanks for reminding me of that - I meant to add after the recipe that you could substitute 2 T of whey for part of the water and make this a soaked crackerbread recipe. That makes the flavor more interesting and imparts greater health benefits as you know. Good question!!!

I'll try this recipe next. Why the asterisk after "water" on the ingredient list?
