Rhubarb Carnival

I know this is late notice but I just had the idea of doing a rhubarb roundup. Once I figure out where the rhubarb can jam roundup is I’ll link that in since there will be a bazillion rhubarb recipes there but I want to include more than just canning recipes. In fact it’s my goal to can as little as possible this year (tomatoes and can jam aside).

I came across this recipe for rhubarb curd, which is later baked into rhubarb bars and right up my alley. She’s linked into quite a few other bloggers with rhubarb recipes as well.

My favorite master gardener, Tom has just posted his rhubarb ice cream.

It got me thinking – rhubarb is one of those things that you either love or hate and if you love it you have endless rhubarb recipes. So please add a link to any and all rhubarb recipes you have on your blog or on other sites that you’ve found and tried.

  1. I keep seeing so many amazing rhubarb recipes! I am making up some rhubarb liqueur and strawberry-rhubarb liqueur right now. I fear the season won’t be long enough for me to make all I want to make, but I’ll be save recipes for next year for sure!

  2. That rhubarb ice-cream looks fabulous. I am not certain I will have a surplus of rhubarb, but if I have enough to spare past my crisps, I will definately make some ice-cream.

  7. Yum everyone! Spread the word. And Wendy, holy cow do you have a lot of rhubarb recipes. I can’t wait to try them! Trini I did make some rhubarb fruit leather last year but I didn’t follow the recipe. My littlest guy wouldn’t eat it but maybe he would this year. I simply added some rhubarb puree to applesauce which I dehydrated. We did this with peach (sticky), grape (sticky but intense) and strawberry last year. Strawberry and rhubarb don’t have much pectin so the applesauce is what makes it nice and pliable, otherwise it’s brittle but it was all so tasty we didn’t care. I can’t wait!

  9. Oops – my first time trying Mr. Linky – sorry about the double entry (is it possible to fix that? I couldn’t figure out how). I actually have a cookbook that is ALL rhubarb recipes. It’s amazing. I also like to make rhubarb fruit leather! My Mom likes to can up rhubarb, so I just pop the canned rhubarb in the blender, puree it, then dry. My daughter loves to have this fruit leather as a topping on her salad (brittleness works well here).

  11. My rhubarb has been being munched on big time by slugs this spring, so I am refraining from harvesting much more from it for the time being to avoid stressing the plants any more. I have GOT to do a major slug hunt though as they are doing a number on the rhubarb patch. Arrgghhhh!

  12. Rebecca, that is great – I’ll have to look for that one. I made a triple batch of rhubarb jam and am making the curd for bars tonight.
    KFG – that is interesting. Maybe you need to plant more lettuce for them as a decoy.
